“La Tesa” is the authentic expression of the ancient Valpolicella wine, Recioto. This ruby-red, sweet, and spicy nectar has always graced the tables of Veronese winemakers and noble salons. Its name derives from the Veronese dialect word “recia,” meaning “ear,” referring to the uppermost lobes of the grape bunch, which contain grapes with the highest concentration of juice and sugar. Recioto has always been the luxury wine of Valpolicella, recognized by the region's residents and the Veronese as an authentic expression of quality and joie de vivre.

NAME: Recioto della Valpolicella DOCG
PRODUCTION AREA: Negrar Valley, Classic Valpolicella
GRAPES: 2.5 kg of grapes dried until around mid-January (Corvina gentile, Corvina grossa, Rondinella, Molinara).
HARVEST: by hand in the second half of September with
positioning of the grapes in the crates. The grapes are subjected
to dry until about mid-January
CRUSHING: in the month of January, after selection of the
bunches, a soft pressing is carried out
FERMENTATION: vinification in steel at room temperature
controlled and in contact with the skins for approximately 40 days with manual pressing
REFINEMENT: Fermentation in steel, followed by 18/24 months in large Slavonian oak barrels.
At least 12 months in bottle before being sold.
ORGANOLEPTIC CHARACTERISTICS: Recioto La Tesa offers a sweet, dry, rich and succulent flavour, representing the pinnacle of Valpolicella's winemaking tradition. It has a very deep purple-red colour.

The entry on the palate is voluptuous and velvety, with a savoury and saline note that supports the drinkability of the wine.
Aromatic black pepper and a sweet note of nutmeg prevail. Black berry and dried plum dominate with noble elegance and a decisive persistence.
PAIRINGS:
Perfect with pandoro and panettone, Tuscan cantucci, dry and crumbly desserts, chocolate and berry mousse, and cheesecake. A must-try with semi-mature cheeses, including blue cheeses.
