Vineyard location Located in the Apricena (Fg) countryside at the foot of the Gargano, they are rooted in calcareous soils rich in minerals, with a south-west exposure.
Grape harvest Manual
Winemaking Vinified in steel at a controlled temperature (14°C), the alcoholic fermentation lasts 20 days, followed by two rackings and three months of storage in the tank.
Refermentation The second fermentation takes place in an autoclave for approximately two months, obtaining the second fermentation.
Alcohol Alcohol 11.50% Vol. Varies with the vintage
Organoleptic notes Fine and intense perlage, bold and creamy foam. Straw yellow in color, the bouquet evokes floral scents of acacia with refined notes of citrus and green apple, with delicate hints of yeast that enrich and make this wine special. On the palate, a fresh and dry style, thanks to its minerality and savory character, offers great pleasure on the palate.
Serving temperature 6/8°C
Recommended pairings Excellent as an aperitif, ideal with appetizers, especially seafood. It pairs beautifully with traditional local seafood first and second courses.
