Winemaking

After careful selection, the grapes are harvested, then lightly pressed and delicately conveyed to the press.
Only the free-run juice is left to ferment at a controlled temperature. It is then aged "sur lies," exploiting the natural breakdown of the yeast cell walls for 60 days.
